I thought I’d try to make some sugar free cookies out of unsweetened coconut flakes. Since the carb count in coconut is very low and this recipe contains no flour, each cookie has less than 1 gram carb. These are also gluten-free. The cookies did not come out very sweet so you may want to add more sweetener or use Splenda if you like a sweeter cookie.
